iTunes never creates a full backup of your iOS device, whenever you synchronize. It just creates a backup of your device’s settings. If you want to create a complete backup of your iOS device, you can do it using a utility called PhoneDisk and Rysnc (a command line utility).
This technique access the root of your device, than copies all the files including system and hidden files and stores it on your computer’s hard disk.
